I had planned to cook these St. Louis ribs last weekend Memphis style to enter in the BBQ across America throw down, but plenty of exhausting yardwork delayed those plans, so they are definitely going on today.
I looked up a Memphis style rub online and it was just enough for the two racks that I put on. If there is any interest, I'll post the recipe on here.

My neighbor came up and the three of us blew through the first rack, so this is the second rack, which will most likely be eaten tomorrow. The baked beans were just prior to going on the smoker.
All in all, the ribs were probably the moistest that I have cooked, I just wish that I had more rub left from the initial application to hit them again when I wrapped. They were a little bland to me, but the girls liked them. The beans were a hit.

Ron Them BONZ look great, I have been looking for a dry rub recipe so if your inclined, please share!! Beans look killer too!!
