Ever since having Croque Madame in France several years ago I've been wanting to make it and yesterday was that day.

Instead of bread, we used croissants, which added a whole new level of butteriness to it. Made the bechamel then toasted the croissants in the frying pan first before starting assembly.

Put down the ham then covered with some bechamel sauce

Topped with shredded swiss cheese.

Put dijon mustard on the top half of the croissant before adding it to the pile.

Topped with remaining bechamel sauce and more swiss cheese.

Put it in the oven to melt while I got the eggs ready for the final plating. The final few minutes under the broiler turned them a nice crispy golden colour.

Topped with a sunny side-up egg and served with broccoli.

This was so good and can't wait to try it again. Only the next time I may try using fondue cheese instead of making the bechamel!
 
Never heard of it either, but now I have.

As I was moving down the thread checking your ingredients, I assumed this was a breakfast cook with the ham and egg. Then I hit the final photo with broccoli on there and realized I assumed wrong.

That right there would be good any time of the day. They say we eat with our eyes, and that is a beautiful plate.
