Hi, my fellow bbq brethren, I am going to be bbqing for 25 people, all adults, 50% men for a friend of mine. I will be serving country style ribs,pulled pork, and cole slaw, potato salad, and corn bread. He will be doing the chicken. there will be a combo platter, which will include all three meat groups, cole slaw, potato salad, corn bread. Single dinners which will include one meat, coleslaw, potato salad, and corn bread. We are trying to figure out portions. This is not a buffet, and I am not a caterer. For a combo platter, as I see it, that is a big eater plate, go for a total of 1/2 pound of meat. For single meat size, go for 1/3 pound of meat. Naturally, you would charge more for a three-way than for the single meat plate.

Failing that, if you want to be more even in terms of price, then settle on 1/3 pound of meat per plate. That is a good middling range serving.
