Chuck Short Ribs on a Large Big Green Egg

Question for anyone who cooks on a green egg -

I have been asked to smoke some beef short ribs this weekend on a buddies large green egg - i do all of my cooking on a offset

How may plates of beef short ribs (the 3 bone chuck ribs) should I be able to fit on a large big green egg - 2, 3 or 4 plates?

is it possible to do beef short ribs in a rib stand?

This may not help but depends if they have the added grates. On my Primo I could probably get 3-4 on the main grate and an additional 2 on the expansion grates comfortably. . Large egg is a bit smaller but with an additional grate I'd say 3 comfortable but I'll let someone with an egg confirm.

Does your buddy have a platesetter? If so, set it in legs up with one leg straight at the back. Heat tends to like to concentrate back there. If you don't want to use a rack, stand them up on their side and put a couple of bamboo skewers through them with a gap in between. Cheap and disposable.
