Cheesy Bacon Grits with Pork Tenderloin and Haricot Verts

Grits are good for any meal, but I especially like them with dinner.
The grits are 100% corn grits made with butter, milk and water. Pre-cooked some bacon and tossed the bacon and some white cheddar into the grits as they were firming up.




On the grill (this is Q-Talk :doh: ) I put on two pork tenderloins that was seasoned liberally Naturiffic's Garlicky Lemon Gourmet salt (more to come on that)

Cooked the pork tenderloin until 145 IT, then let rest until it hit ~150F.



Sliced the pork into medallions and served alongside the Cheesy bacon Grits and some Haricot Vert was the green stuff on the plate.

It was a simple, but tasty meal!
 
I'm loving all that!

I haven't had grits in a while. I'm having a "fark it I'm gonna eat whatever I want" breakfast tomorrow with biscuits and gravy and taters - grits just made the menu.

IMO it isn't possible to have pork tenderloin cooked any more perfectly than how you did - just fantastic!

It is 3 minutes one way of the other to either under cook it or overcook it

I'm with Greg, tomorrow I'm rewarding myself with biscuits and gravy with an over easy egg on top.

Your grits look so darn good I'm going to give them a try. Any tips you can share on making yours?

I use yellow corn grits (not enriched, white grits). I use half water and half milk, with a gob of butter.

Bring the water to a boil, add in milk (stir lots so you don't scorch milk) and butter. Once that is back to a boil add grits and turn down to med-low for 20 minutes or so (until creamy). Stir frequently.
