I am catering my nieces grad party in May and they want half jerk chicken (pieces) and jerk pork (pork loin or steaks) and half BBQ pork and bbq chicken. I am figuring 1/2 lb raw pork for pulled BBQ pork. Would I go 1 1/2 pieces of chicken per person? Also, if I am using pork loin, how do I figure that per person? Is 1/4 lb loin per person enough or is there more shrinkage than that?
