Had about a pound of peeled crawfish leftover from our last boil sitting in the freezer. Wife wanted crawfish Mac and cheese. Used cheddar, mozzarella, and Colby Jack. Turned out pretty good.
Looks great - got a little Cajun cookin in dallas as well - injected a pork shoulder with Tony C creole butter - little hot sauce as a slather and Meat Church Holy Voodoo as the rub - hope to pull and rest around 2 today - then throw on a Mac n cheese with a Cajun smoked Gouda cheese sauce
