A few fine folks have been posting cooks using Stubb's green chile marinade and this gave me an idea. Wanted to do tacos but discovered we were out so we went with plan B.
Took a nice hunk of chuck roll and seasoned it with Kosmos SPG. Smoked for about 3 hours on the kettle. Diced a small onion and some garlic and added them to a roasting tray. Used about half a bottle of the marinade and covered with foil, it went back on the Q for about 2 hours. Pulled the beef, mixed it all and put back on the Q for 30mins. Misses had prepared some nice coleslaw. Served with some homemade pickled jalapenos.
Beefy flavors mixed with the green chile marinate were great. It was a bit fatty but the slightly tangy slaw was perfect with it. Misses said I have to do a re-run with tacos.
