Bone in rack of pork

Local Costco was clearing out holiday pork loin bone in for $1.99 /lb. So I bought couple and cooked one for lunch. Simple salt and pepper rub and smoked on the Big Joe at 300 F for about 1 hour 40 minutes.

Ate it with some rice, asparagus, and homemade kimchi. Simple yet delicious.

I always look forward to the 4-6 weeks each fall that Costco carries those. That’s a good price, they’re still $3.29/lb here. I cut a 4 bone roast, a 2 bone chop, and a few single chops with the one I bought.
