Graduation Party BBQ with PRON!

My wifes best friend hired me to cater her Grad Party. She graduated Magna Cum Laude from Cal State San Marcos with a degree in Communication. It was my first official paying catering gig. :-D:-D:-D

I cooked (2) 13 pound Briskets, (4) 7.5lb Pork Butts, and (7) 4.5/5LB Chickens.

It went amazing. The feedeback from the guests was incredible, and I gave out about 20 business cards, and hopefully will get calls from 4-5 of the people. I think the brisket was the best Brisket I have ever cooked. The pork was delicious, and the chicken was amazing. I am not a chicken fan but this stuff was fall off the bone tender and so juicy. I dont have pix of the cooked butts, as I went to take a shower and my help, well my help really help and it was all pulled b4 I could photgraph it.

Man that looks awesome! What a set up and you have one jealous "want to get into catering" Bretheren her in the midwest! I predict you will get 20 calls this week asking for your business! Nice job.
 
First off the food looks fantastic. Nice spread and everything.

Second...that's a nice shade of nail polish you are using.
 
the layout looks great - complete with signs identifying the food contained within the chaffing trays - I hate when it is unknown whats in there

looks like ample room to configure a sandwich and still have fair volume of traffic flow

might be a bit light on the non meat fare ( vegetarians should eat too )

the chickens in the drum look perfect ! how did you get so many in there and what did you support them with ? what was the prep on them?


the briskets look tasty and the finished products all look moist and delsh


I'd give it a 8 over all , excellent for a first run ! I have a feeling you will soon be well on your way to many more paid jigs
 
I asked about the veggie, and there were non attending. Thats why it was all meat.

The chickens were done Beer can style, I used plowboys Yardbird rub, and a little injection in the breast meat (also did the ice on the breast ((Thanx Country)) and a nice 1.5 hour smoke. I had my friend help me with the chickens, and I credit 4 hands instead of 2 allowing me to get 7 chickens in the drum. I believe I could have fit 2 more on.

That is one great looking spread. Feels good at the end of the day I bet, all those satisfied faces and bellies... What was it that you charged? Per person? Just wondering.
