This was my take on Mexican roadside chicken. Only I did cornish hens since the chickens available were massive in size (I don't like huge birds)

While the hens were marinating I started on some Mexican rice

Hens took on a color just like the roadside chickens :thumb:

I am guessing you will be refinishing the deck soon - You should consider Rustoleum Deck Over. I used it at my last house instead of replacing and glad I did.

Don't have my rub or spice arsenal in the cabin so I happened to see these which had all the perfect ingredients for a marinade. Also used some Fiesta taco seasoning, RealSalt and fresh orange juice.

Thanks Bill! I usually don't do canned beans but when I make the exception it's the Ranch Style beans.
