I had some lean Elk burger in the freezer and wanted to make burgers for the TD, but the Elk can get dry easily and not stay together without a little fat blended in. Sometimes I use Bacon ends and pieces, but I had some Ribeye from trimming up a primal for a steak cook I did at work (sorry some of the cell phone pictures are not the best)
Here is the Elk burger

And the Ribeye trimmings

View attachment 161796

I ground up the Ribeye using the Kitchen Aid - Not enough grinding to break out the Brut LEM.

View attachment 161797

Mixed it up good

In the meantime, with put some bacon for the burgers and poppers for appetizers on the Yoder

View attachment 161799

Bacon and Poppers are done – Time to drain off the grease and snack on poppers while getter the Weber ready and making burger patties

View attachment 161800

The Weber is almost ready with KBB and Maple chucks

View attachment 161801

Burgers are on indirect. About ½ pound with a center indent and just S&P

View attachment 161802

After getting some smoke indirect on both sides – In the center for a good sear (that little one is a test for something else)

View attachment 161803

Flip it to release any extra grease and get a good sear

View attachment 161804

Flip it again to make sure it is cooked through as it is a bit thick

View attachment 161805

Back to the outer edges with Bacon and a generous amount of Cheddar cheese. Made sure the indent was up so it would fill in with melted cheese

View attachment 161806

Get the cheese good and melted

View attachment 161807

And the burger will rest while the bun is prepared

View attachment 161808

Toasted the extra-large onion bun and went basic with Mayo and Mustard

View attachment 161809

And here is the Basic Elk, Ribeye, Bacon Cheeseburger

View attachment 161810

Plated with MSD’s Macaroni Salad with a sprinkle of HDD

View attachment 161811

This was a good burger. The Elk flavor was the star complemented with the Ribeye, Bacon, and Cheddar Cheese. The center was extra cheesy with the indent full of melted cheddar.

Good to the last bite!

Beautiful. Love the onion bun!

Also, if you bought the 2 piece diffuser plate, and grill grates with your Yoder, it does a fine job on burgers. What I do, when I know I am going to be doing some high heat grilling, at the end of a cook, and I have the room. I pull the 2 grates that sit over the fire pot, before it heats up. Then at the end of my cook, I just have to pull the cover(a pig tail flipper works great) put on grill grates, and turn up the heat. For burgers, I like to turn the grill grates upside down, so you get more contact with the heat. Don't get me wrong, I love playing with the kettle, just some info for a new Yoder owner.

As Grandaddy used to say, "That'll eat right where you hold it!"

Hope you're havin' a good weekend, brother.

Thanks guys - Appreciate the kind words.

I did not buy the 2 piece diffuser plate but I plan to mod the stock one myself.

Love that one Marc!

I'd totally hit that neighbor. Wonderfully done.

Does the foil tamper with the cook on the Yoder? Asking for friend. :heh:

To me, it is a very important upgrade, should be standard. Cooking aside, it makes it much easier to handle, and clean the plate. Plus it gives you easy access to check your fire pot, and clean it out.

How about you Josh? Do you use foil on the diffuser?

I don't foil. I pull the diffuser plate, and hold it over a barrel, and scrape it with a heavy duty paint scraper. Comes almost perfectly clean. Leaves enough grease on there, to keep it from rusting.

From my research, when shopping for a pellet grill I can say:

Yoder recommends not foiling, but they say it is fine, as long as you wrap the foil tight around the plate, and don't leave overhang, to obstruct air flow.

Gotcha! What I was told yesterday when I picked her up. Just wanted to double check since I like easy clean up. Makes total sense.

 Wow, I thought you had decided on a Mak?

I think you are going to be happy with your choice. It keeps surprising me. Welcome to pellet life. It is whole new world.

Eventually MAK too but this is for the cabin. They don't allow charcoal or wood up there but I can get away with pellets. Too sweet of a deal to pass up so I snagged her up from a guy from Wichita who knows the Yoders. Like knows them knows them. He was moving on up to the 1500. It's in pristine condition and a '16 model.

I don't know how you could get any safer, and still use fire. What I do a lot, is put the meat on the top rack, then put a pan underneath. Even easier than foiling.

Yoder lets you transfer warranty, so you should give them a call.

Oh and thanks! We fired her up for a test run and thing ran like my offset churning thin blue. I'm impressed.

Sorry for the hijack neighbor~!

I thought of the pan under technique immediately. :thumb: Yep, still under warranty. I'll call them Monday. Picked it up yesterday.
