Sandwich Throwdown

This is my entry to the throwdown. This is my first one and also my first cook on my new UDS...

My entry consists of:
Pork tenderloin rubbed in salt, pepper, garlic and italian seasoning. It was then smoked to 150 over RO briquets and oak lump with a bit of apple wood for good measure.

It was then put onto a sourdough loaf that was toasted and coveded in a thin spread of Brie cheese. The pork was then topped with carmalized onion and granny smith apple. Topped off with mixed greens.

I've been toying with the idea of making a McRib sandwich. Guess what Wikipedia says about them?

Product Description:

McRib consists of a pork patty, barbecue sauce, onions, and pickles served on a 5 1/2 inch roll. Despite its name, it is primarily composed of pork shoulder meat, according to McDonalds. According to Chicago magazine, the patty is also composed of restructured meat products such as tripe, heart, and stomach blended with salt and water to extract salt-soluable proteins, which act as a "glue" that helps bind the reshaped meat together. The McRib has 70 ingredients. Thirty-four of those ingredients are contained in the bun, including azodicarbonamide -- a flour bleaching agent.

Certainly not making their version!! But ribs are on sale today, may just make my own version.
