Italian ABTs
Ingredients:
Baby Basil
12 oz whipped Cream cheese mixed with the basil.
"Parmesan mix" (Parmesan, Asiago, Romano, Fontina) :thumb:
All mixed up (I mixed in some Yardbird in a later step)
Capocollo (quickly seared in a cast iron pan)
Jalapenos (of course)
Dark Brown Sugar
Bacon (Most of these have Caponollo ham in them)
Yardbird Rub (Had to sub Bovine Bold for outer dusting)
Preparation:
1. Prepare Jalepenos (halved, deseeded, deveined).
2. Mix cream cheese, some Yardbird rub (don't have an exact amount - I just eyeball it), chopped baby basil, and the Parmesan cheese mix.
3. Put down a bead of the cheese mix.
4. Lightly sprinkle dark brown sugar on top of the cheese-filled Jalepeno.
5. Roll capocollo and lightly press down into cheese.
6. Wrap with a 1/2 piece of bacon.
7. Lightly dust with Yardbird [Used up the Yardbird in the cheese, so I will LIGHTLY dust with Bovine Bold].
Cooking:
Smoke until bacon gets to your desired doneness (usually about 1 1/2 hours)
