Wink 2.5 Minute Pizzas From the FrankenWeber Pizza Kettle

We tried a new dough recipe last night, a Neo-Neopolitan dough from Peter Reinhart's book, American Pie. The dough seemed a little stiff, and I was concerned it wouldn't be very easy to work with, but it turned out great.

We did three different pies last night - Basil-Tomato, Salami, and Pesto chicken with sundried tomato, mushroom, and provolone.

The pizzas cooked in about 2.5 minutes as I got the stone temp up to 725 degrees this time. From start to finish, we had three piping hot pies in just under 10 mins.

They were stupendous!

Very simple - just turn up the propane! It only took about 10 mins for the stone to get to 700.

very nice! What flour are you using? I cant go above 650 stone temp on mine without them torching in 30 seconds...also, what HR did you use?
