Default Little Dick's chicken ficks (pr0n)

Greetings,

Well, the missus has been after me to cook chicken (something about too much red meat, cholesterol, losing-weight resolutions, etc.), so here goes!

I went to the grocery store and picked out a 5.34-pounder. I asked the meat-cutter guy to halve it for me and he obliged.





To keep it simple, I schlapped on some EVOO and Simply Marvelous Sweet & Spicy.







I put the birds on the Weber OTG ("Fred") over a 3/4 chimney of Kingsford blue. I added hickory chunks and they schmoke-surfed ay 275-300F for an hour and 45 minutes (up to 164F internal). During the cook, I basted them thrice with a combination of my BBQ sauce, butter, honey, Sriracha sauce, and vegetable oil. Since I was unsure how long they would take, I started 'em too early and the wife-remember her, she wanted chicken?- would not be home for almost an hour.

I popped the chickens in a pan, covered 'em in foil, and threw 'em in a 175F oven to wait.



I took them out of the oven and lest them rest 10 minutes before chopping them up.

The verdict: oh my GOD were these GOOD!! The juice literally shot out of one when I cut into it. They were smoky, tender, juicy, perfect! I give credit in no small part to the Simply Marvelous rub. Great stuff!
