Mayonnaise is basically oil, egg yolk, lemon juice/vinegar. Frying bacon produces a fair amount of grease/oil so....

collect the grease...

using a stick blender in a small container with 1 egg yolk, 2 tbs lemon juice and 2 pinches of sugar. no salt was added, there is plenty fromthe bacon.
start blending and very slowly add the bacon grease and you should end up with...

It was good on a turkey sandwich.

one problem,it gets a little firm in the refrigerator but ti still spreads with out tearing the bread.

Or you could just buy Baconaise, its even Kosher :-D
 
Baconnaise is OK. It has that fake bacon flavor to me. I'll have to try home made bacon mayo some time!
 
Brilliant!:thumb::thumb: I wonder if you mixed the bacon grease half and half with regular oil would that solve the hardening :becky: issue? You'd still get the flavor.
 
I was thinking the same thing as Guerry, use some veg oil and it should stay more spreadable!

And ummm... no vinegar?

This one is a keeper. I love bacon and that flavor/taste will go with alot of things. How about a bacon cheeseburger with out the bacon. yum.
