Default Catering for 200 need portion help

We have a catering gig on the 21stAnd I need some help on amounts of sides to buy. We will be serving pork loin and chicken Quarters but my question is we will be doing Green beans(canned) Corn(canned),Rice or Mashed potatos. We will also be serving a chopped salad and a pasta salad,peach cobbler and a bananna pudding. We have catered before but usually BBQ and BBQ sides. About how many full size sheet trays for the desserts and the canned vegs are commercial size cans. We are using canned vegs due to budget(tight budget) anty help would be appreciated. Alan

Whole steam pans feed 60 for veggies and potatoes. Desserts around 40.

that works everytime for us. careful on the taters use ice cream scoop for serving. some people tend to overload their plates

Works for us everytime, as well as 25 - 30 for lettuce salad. More if your not using salad bowls.

The Gig went really well and the portions were almost spot on except for pasta salad had leftovers with that one but none went to waste. I took it to company party. Thanks guys..
