Wood -- Intensity -- Description -- Food it works with

Alder -- mild -- Sweet musky flavor of NW Smoked Salmon -- Salmon, fish pork, poultry

*Apple -- strong -- Strongest of the fruitwoods with sweet fruity smoke -- Beef, pork, ham, poutry, game

*Black Walnut -- very strong -- Intense smoke like 10x hickory, can be bitter -- Steak, beef, pork, game, venison

*Cherry -- mild -- Sweet fruity smoke gives a rosy tint to light meats, good smoke ring -- Beef, pork, poultry, fish, game

*Hickory -- strong -- The classic smoke flavor most commonly used -- Beef, pork, poultry, fish, game

Jack Daniel's -- strong -- Sweet smoke with aromatic tang, good on red meats -- Beef, pork, game
