Does anyone have a good recipe for a honey and brown sugar brine or a brine using fruit?

There is a Google search box at the bottom of the page that searches just this site. You'll find a lot of brine recipes in the older posts.

To get you started, there are some good recipes in Smokin' Okie's Brining 101.
