Lightbulb Sushi Grade New Zealand King Salmon On The WSJ

I've been using my poor Weber Smoky Joe as my chimney starter stand for the last 2 years. Since I have 5 other grills/smokers, I just didn't need to use it for anything else. But last night, my guilt got the best of me - I certainly wasn't going to use my gas grill to cook this marvelous fish, so I took my WSJ out of mothballs and used it for what it was meant to do!

On Sunday, at our local farmer's market, we stopped by a fish stand and they were selling some sushi grade fish. The salmon really caught my eye. I could tell this was some fine fish, so I picked it up so I could grill it for the missus and I.

First, I removed the skin:



Then, after cutting the salmon into two serving size pieces, I seasoned it up with some rub:



Then, onto the Weber Smoky Joe so it could cook indirect for about 10 mins. I threw in a few hickory chips to add a light smoke flavor. I then finished it up direct for several minutes a side:



I could tell it was perfectly cooked when I pulled it off the grill:



The missus decided she wanted hers over a bed of greens:



This was some of the best salmon I've ever had. It was rich, moist, and flavorful. Needless to say, there wasn't a bite left!

Being an avid fisherman I had to research this fish, knowing all chinook are a pacific origin. A special treat I had never heard of. Thanks for posting.
