I read a lot of books. However, learned the most right here.
I have some at home and will look, but the best experience is apprenticing or interning with someone.

The school of hard knocks?

I'd find a local caterer and volunteer to help them for free in exchange for some learning. I asked one here in St. Louis a while back and he was happy to have the hands. Unfortunately life events forced some change of plans and I never got started.
