I whipped these up while I was waiting for the ribs to smoke.

Start with some flour, butter, sugar, honey, milk, vanilla and salt, and make a little graham cracker dough. Roll it out:



Fortunately I was using my SNPP for the tailgate 'Q, so I was able to toss some coals into the OTS, open up the vents and get that sucker up to about 400, which was just right to bake these little guys.


Then, I went inside, grabbed some corn syrup, sugar and gelatin. After a hot caramel/burns-like-napalm-on-your-skin bubble-over in the kitchen, I finally got the sugar mixture to the right temperature. 15 minutes in the stand mixer later and I've got a baking dish of homemade marshmallows.


An hour or two later, they are firm enough to cut. I laid out a nice slab of marshmallow atop the graham crackers, along with an arrangement of Toblerone.


20 minutes in the smoker later, you've got yourself a gooey delicious smore!

Default Candy Apple!

Well, here is my first entry into a Throwdown! I thought what is more fall and holloween than a Candy Apple? So, I set out to do something like a baked apple. My wife said that she thought a baked peach would be good. So I did one of each.

The apple was cored out and stuffed with a ~1tb butter/ 1tb brown sugar/oatmeal mixture. I was going to stuff the peach with just cream cheese. But, when I saw how much it was going to take to stuff the cavity, I felt a little piggishly guilty and decided to mix the cream cheese with more oatmeal and brown sugar. Onto a 350* smoker for about 50 minutes. Then served warm and drizzled with caramel and chocolate.

If you carefully seed the egg plant and take great care to not remove any more of it's fleshy goodness than necessary, 72 Jolly Ranchers for an average size egg plant has been my experience.
