Default Things may finally be starting to move

I've got a possible sponsorship use of a cooker for the Plant City Pig Jam (KCBS) on November 19-20. I'll know a bit later this week.

I've also got Partygrills.com working on an estimate to have their double-door verticle cooker mounted on a 24 foot flat trailer with a concession area. This all still has to be hammered out - financially I may have to go smaller or fewer features but we'll just have to see. That's one nice thing about dealing with a local company.

Below are pics of the small cooker I think I'll have for Plant City and the verticle I'm getting the estimate on. This pic shows the verticle on a smaller footprint trailer. Also, the pic shows the model with an opening top on the cooker since this one has a whole-hog rotisserie setup. I'm not getting the rotisserie!

Sweet looking rigs. We seem too drool over all these pictures of smoking rigs like most people look at new cars.

Tim headed over to PartyGrills in Lakeland to talk cookers! He met up with Scott Brown and talked about the verticle cooker and some modifications :D These guys are at www.partygrills.com in Lakeland, FL.

Also, Tim got a look at the cooker Scott has indicated he'll let us use for the KCBS event in Plant City.

We're planning on vending some turkey legs and this is just the cooker to do that!!

If things go right we'll have a new verticle cooker for the 2005 season and some outstanding experience from FBA and KCBS cookoffs - not to mention the experience of selling some t-legs!!

Wow, I really like the firebox basket design on that last cooker! BTW, doesn't that vertical cooker look like the one that midnight had built, kinda?

Grats DF...I hope your endeavors pan out for you cause you know there are folks like myself that are a few steps behind you taking notes.

This one was built for a chef in Miami. He's bringing it back for some mods :D He doesn't use the rotisserie either. The bottom can be used for charcoal (direct cooking) but he's never used it for that. I've had these pics for quite a while.

Tim talked with Scott about some mods (go figure!) and Scott was receptive. Things like, more shelves - Scott says 6 per side, Tim thinks 5 would max and still allow plenty of air flow; Use that deep bottom for water reservoir - water inlet with float valve and then the ever popular drain mod! ; add full baffling with tuning plates; add a second chimney with damper - one on each side to allow for side to side adjustment of heat movement; etc. etc. etc.

I think Tim's about ready to come completely over to the "dark side" :D I'm already there - Plant City will be my third competition this year (4th if you count judging at Minneola) - and I only started in August (thanks Phil!). Tim and I are planning to do as many events in 2005 in Florida as we can possibly get to. We'll be in planning mode after Plant City so December will be quiet! Plans will be going forward re the rig - I had an interesting talk with the Health Department today - my "commissary" at the church is fine and all I need is a letter authorizing me to use it. The rig, on the other hand, because of my intended double use as a concession/off site catering/cookoff will need to be similar to the Austin National or Southern Yankee with an enclosed concession stand, hot/cold water, potable water and waste water tanks, three-compartment wash sink, hand sink, washable floors/wall/ceileing, covered cook area, etc.
It's not quite as bad as it sounds since I planned on doing it this way anyway -- I just needed verification! Fortunately, I can finish off most of the work myself - it's a good thing I'm familiar with RV systems :D

Here is the whole story. Those who know DF will understand

I checked e-mail yesterday AM and discovered that our "carefully thought out plan" was in the toilet and we were now 3-6 months (or a year) ahead of schedule
OK--
I sat in shock for awile and then hummed and danced to "The Time Warp" for awhile!
I emailed him to "breathe a bit" till we can talk!
I accused him of smoking some weed
He claimed innocence.
Well, when he expained it, his "new" plan is actually doable and I guess we are like "Butch and Sundance" here. If we gonna junp off the cliff-
we are gonna sink or swim together

So, DF will give you the "blow by blow" (this is "competetion", so leave that alone) and I will sit back, help design his custom cooker, and enjoy the benefits of all of this!

At Plant City, we may cook as many as 75 Turkey Drunnies and a batch of sausages or "whatever" at a time on this HOG.
Maybe a Butt or so.

Now, the HOG firebox holds 100# of charcoal/wood at a bite.
Cookng area is measured in "Square Yards":.

But, I am really concerned that we may not have the space and thermal capacity to handle all of this!!!

But, just in case we are not "stressing" the HOG enough--

Where is the PooBah with a prime rib under his arm when ya need him ?????

Anybody who sees Phil around Plant City in mid-Nov, give him a ride!
We can probablu fit a prime rib in!
