Nice looking bird and the UDS looks good also.
I had the same ash problem with K briquettes along with taking forever to get rid of the white smoke. I switched to lump and I get better temperature control and no white smoke. After a 12 hour smoke, I still have half a basket left.

What are you using for a lid?

Yeah previewing the post would have been a good idea, I'll have to keep that in mind for the future lol. I'm using the lid off a 22" kettle grill, brand unknown as I found it(in the garbage room at my building, but it was brand-new never used, only the handle on the lid was broken). I spent a LONG time trying to grind down the lip on the drum hoping the lid would fit(and it *looked* like it would), but eventually I just switched to a cutoff wheel and zipped it off completely. The lid doesn't seal that well, but it seems good enough as I had no trouble maintaining 325-350. The temp rarely moved, and once I had it up to where I wanted it I only needed the ball valve open less than halfway...makes me wonder if I'll have trouble holding lower temps, or if simply starting with less lit charcoal will take care of that.

That's good to know, the white smoke was bugging me as well. I still have another 18lb bag of the briquettes so I guess I'll use them up and then try to stick with lump in the future. How big is your basket? Mine's 14" diameter and 12" high.
