Default Brisket Flat Question(Color oif the Meat)

This is only my second time smoking a flat. Looking at the meat once I pulled it out of the cryovac, it has a nice fat cap and good pink color. But one edge of the meat is brown in color, is this normal.

This is very normal. It could be the way the packaged meat has been sitting, letting gravity do its thing with the blood.

Is it more of a gray color along the edges? If so just cut those off. Its perfectly normal.

Yes, it is more of a gray color. I just trimmed it a bit and put it back in the fridge with some rub on it. Can't wait to get smoking in between kids soccer and football games.
