Default Raw chicken

Not mentioning any names but I hear that some team this past weekend in seaside heights turned in raw chicken. What a jacked ass.

they claim it was raw, guess they werent use to having real smoked chicken with a smoke ring all the way through!

Raw chicken is totally acceptable, as long as it is sushi grade .

If they didn't complain about it being under cooked they'd complain that the wasabi glaze being too spicy.

Def changed the recipe, it was good. I ate the biggest piece and I am still walking. It was pink to the center with smoke. the scores were like 922, 922, 822, 989, 989, 988. If two didnt think chicken cooked at 275 for two hours was raw, those were three stron scores. Iam not 100% on the accuracy of the chicken scores but that is close. Dont know if judges are use to a smoke ring on chicken!!!! hahahaha

Actually, judges take a paper towel and press it against the chicken meat. If the juice absorbed in the towel is anything but clear it is considered to be undercooked. Pink or red juice usually get's a DQ.

I was told a team at a local KC area contest got ran off by a Friday night storm and left their chicken out on a table. When they came back on Saturday morning, they cooked it and turned it in anyway. Spoiled is worse than raw!

Not a DQ - it is not illegal to turn in raw chicken thus it can't be DQ'd. 2's for taste and tenderness if the judge is unwilling to eat the sample.
