Hot 'n Fast Hickory & Pecan Smoked Birthday Ribs
One of my closest friends threw a bash at his place last Saturday, so his wife asked me to cook his favorite - my BB ribs. Here's 5 racks all rubbed down with my Rib Rub #1, which I haven't used in about 2 years:
Here they are about 1/2 way through the cook. I used hickory and pecan for smoke: The ribs were done in about 3 hours, with a steady drum temp of about 275. After I pulled them, I sauced them lightly and packed them up for the party. Thanks for checking out my birthday ribs.

Outstanding Moose! You can leave the sauce on the side for me. Those don't look like they needed any really.

Yup, I'm with you. I like mine just with rub, but my buddy likes them with sauce, and since it was HIS birthday and not mine...
