Talking Hot 'n Fast Hickory & Pecan Smoked Birthday Ribs

One of my closest friends threw a bash at his place last Saturday, so his wife asked me to cook his favorite - my BB ribs. Here's 5 racks all rubbed down with my Rib Rub #1, which I haven't used in about 2 years:



Here they are about 1/2 way through the cook. I used hickory and pecan for smoke:



The ribs were done in about 3 hours, with a steady drum temp of about 275. After I pulled them, I sauced them lightly and packed them up for the party.

Yup, I'm with you. I like mine just with rub, but my buddy likes them with sauce, and since it was HIS birthday and not mine...
