Default First post, and second BBQ attempt ever (with pics)!

Hey all,

My groomsmen all pitched in and got me the greatest wedding gift: A Traeger Lil Tex Pellet Smoker. I couldn't wait to fire it up, so I seasoned it and made 2 racks of St. Louis which came out okay. But last week I decided to do it up right.

Here's what I did:

- 2 racks BB
- 2 racks St. Louis
- 1 beer can chicken
- 48 chicken wings w/ homemade wing sauce
- 8 fresh Bratwursts
- Fried pickles, mock "creamed" corn & mushroom salad

Did the ribs a little differently than the 3-2-1 most seem to do here: Did an hour on the SMOKE setting to lay down the smoke flavor, then 2.5 hours at about 240F, and then the last hour wrapped up on HIGH with some mop. Sprayed every 45 min or hour with apple juice. The rub was made by a guy who runs a BBQ joint in town, who was also the salesman that sold my guys the Traeger.

Thanks everyone!

The old lady made the fried pickles, but she used cornmeal (with spices mixed in) as the breading, and egg & buttermilk as the binding agent. I think for spices she used salt, pepper, and paprika.

We did both pickle chips and pickle spears. They are a great appetizer to start people off during a football game.
