Default A Few Butts

Last Wednesday my 2 bbq team mates and I cooked 280#'s of pork butts.
The pork was pulled and sold in sandwiches at our local fair.


This is a picture of Mark and Don trimming butts.


Rick the park manager and Mark checking temps on the Klose pit.


Don and Mark wrapping the butts, a few of them got singed due to a pit fire.
No damage was done to the meat or the pit but you should have seen this fat old man hustle pulling 3 full racks out of the fire fast.

The pork was mostly sold out Friday nite, the small amount of left over pork was sold out early Saturday morning.

First year we sold out, last year they had 2 roasters left over so they cut back some.
If we had done the normal amount we would have sold out again......oh well we just cook what they get us.

This year we spritzed them with corn oil and Pepsi which produced an awesome dark bark.
We foiled them at 160 internal temp.

We fast cooked it at about 300 degrees, we had the meat off the smoker and cooling after 7 hours. The meat was just above 200 internal temp.

Wow that is a lot of meat, can't say I have ever seen that many butt all in one place. Looks like a lot of work, but I'm sure fun or at least rewarding.
