Question Any UDS suggestions for my defrosting chicken thighs?

Got me a package-o-thighs defrosting at the moment. Wife gave me a honey-do list this weekend which includes smoking the chicken on the UDS.

Any suggestions? Should I go hot & fast? 325 for 1.5 hours or so?

I just did some on the uds this morning, ran between 325-350 the whole cook, flipped after 30 minutes and sauced at the 1 hr mark then cooked another 10 minutes to set the sauce. Came out awesome. This was legs, thighs and wings.

Rub with Olive Oil and Rub du Jour...
Use wood chunks sparingly
Set DrumPit Temp to 325*
Cook Skin Up
I don't flip mine...
Cook to 165* internal about 1.5-1.75 hours

Hit them with Magic Dust, cook at 325 degrees until internal is 165-170. Mix honey, MD and your favorite BBQ sauce for a glaze at the tail end of the cook. Yummo.

As promised, here's some PRON from tonight's smoke.

I used Kingsford and 4 chunks of Hickory. Rubbed the bird parts down with Plowboy Yardbird and on they went at 325* for close to an hour. Glazed lightly with Hayward's BBQ Sauce the last 5 minutes.

My wife took a couple bites and said, "if you're going to be making chicken this good, then I don't ever need to order chicken from a restaurant again!" Talk about an ego boost!

I thought the combination of Plowboy & Hayward's was nearly perfect on the spiciness level.
