Lomo al Trapo - Beef in a Towel (mega pron)
Here is the first cook we did in my wife's new Big Green Egg this week. It's a Colombian dish that literally translates to "beef tenderloin in cloth" and I first saw it in Raichlen's Planet Barbecue but this is the first time we tried it.
Gimmicky, yeah, a bit. But it makes for a damn cool presentation. Here is the quicky photo version but basically you take a beef tenderloin, wrap it in a cloth, ton of salt and herbs. Then roast it straight on the coals for 9 minutes, flip 8 minutes. Done. Check out my blog post for the details. Results: The salt and towel made a great protective, seasoning crust. I was worried it would be overcooked or too salty. I was wrong, it wasn't a problem at all. The crust broke off cleanly and the beef came right out leaving the shell behind. Nicely medium rare... I served it with a spicy chili cream sauce... I'd definitely do this again, especially for company since it looks cool as **** when you break it out of it's shell.
