Someone (sorry... I forgot who) posted a question the other day about what to do with the trimmings from spare ribs when you cut them down St. Louis style.
There were tons of good ideas in there, but I just had another brainstorm last night (sorry... no pics. I didn't think this would be worthy, but I was wrong... )I cooked up three slabs on Sunday and so had a LOT of trimmings left over. Last night, we made "Spare Rib Quesadillas". I took all the meat off the cartiladge and chopped it up into a medium dice. Then we spread some shredded Pepper Jack and Sharp Cheddar on a Tomato-Basil tortilla, topped with a little bit of the rib meat, folded and dropped on a hot skillet until the tortilla browned and the cheese melted. Super easy, super quick and SUPER TASTEE! This was a great way to get your full money's worth out of a slab.
