I used my UDS for a catering gig on July 4th weekend for a bunch of bikers. They loved it and asked more questions about the UDS than the Klose offset sitting right next to it. They all want to build one now.

Different smoker types that will be OK'd by HD will vary by location. There are some places that you must use a SS interior smoker.
