Yep yep... it is true.
OK.. here is the deal. Sometimes when I do legs and wings, especially if I use a sauce.. the skin is less than desirable. So last night I decided no tomato based BBQ sauce.. but to try a derivation of an Alabama white sauce. For the sauce I used "homemade" mayo and apple cider vinegar, with a good dosing of a self made Cajun spice mix. Step One... Consisted of making the mayo and adding in the Cajun spice. About two years ago I started making my own mayo. It is very easy to do with a stick/immersion blender. In literally 40 seconds you will have the freshest and best tasting mayo you ever had. Even non mayo eaters have admitted they like this one. Best part?... NO Chemicals. Just eggs, canola oil, little vinegar and lemon, salt and onion powder. Anyone want the recipe be glad to share. Made this with blenders prior to a stick blender, but the stick/immersion blender literally makes it 100 times easier! Something about the forced downard vortex. ![]() Step Two... Take the wings plop the mayo/Cajun mix on top, and add 1/2 amount of cider vinegar to mix. So if using 1/2 cup of mayo.. use 1/4 cup of vinegar. Mix up gently but good Make sure mayo breaks down to more of a liquid than clumpy. Add more dry spice if you want extra kick. Next time I will add more... could of been a tad spicier than what I did last night. Let this sit while the grill and coals are getting ready. Make sure to come back and visit them to give them a gentle tossing a few times. ![]() Step Three... Well the camera battery died at this step! This is where you put them on direct heat and put a small sear on them. Watch out.. as they will char quickly due to the base sauce. Keep turning to keep from getting too charred. Then I moved off of direct to finish up. Step Four... Thankfully the battery charged up just enough to take some finishing pics. As you can see they are looking mighty fine. As crispy as a fried naked wing, though without that "dry" that comes with them at times. Man oh man.. these were good and tasty! As you can see they have a wonderful golden and reddish coloring. The gold from the white sauce mix and the red from the cajun spices. ![]() ![]() ![]() ![]() ![]() ![]() Hope you enjoyed my morning photo essay. ![]() May your day be blessed and safe. ![]()

Ooooooooo...very nice. I use mayo instead of butter to toast my bread (either in the cast iron skillet or under the broiler) for BLTs. I can see where it would really enhance the chicken. Thanks for the idea!
