I've cooked most every cryovac's piece of meat I've purchased within a day or two so I never paid attention to the shelf life of the meats. I'm doing my first event in a week and I don't want to buy the meat and have to freeze it, but I don't wasnt to wait until Friday morning a find I can't get a brisket or a few butts. How long will cryovac packed meat keep in just the fridge? I know supermarket plastic wrapped meats are good for 3-4 days, I would think the cryovac would last longer.
