I have been asked to cook brisket for 250 people at my church. I have done comps but not catering. I need help with how much brisket to cook. I have read a lot of post and came up with the following. I figured 1/3 pound of brisket per person. This comes out to about 89 pounds of cooked meat, at a 60% yeald that comes out to about 140 pounds of uncooked meat. Does this sound right or do I need to figure 1/4 pound per person.

Sounds right to me. You may want to scale back to an average of 1/4 lb per person if you anticipate a lot of women and children in the guest mix. Hamburgers and hot dogs help make the menu more kid friendly, if that's a consideration.

That'll be pretty close. I always figure 1/3 pound. Depending on your brisket and how well you slice, clean, your yield may be a bit better - but 60% yield is what I use, too.

Your calculations sound right, but like PCDoctor 1979 says, you can cut back to 1/4 pound PP depending on what else is being served and how many children are attending. Good luck!

Also depends if you plan to serve it slced, chopped, or a mix of both.

Thank You for your response. Sliced Brisket is the only meat that is being served at this time. Good idea about hotdogs for kids, I will suggest that.
