BBQ Beef Chuck Roast
I was at COSTCO the other day and couldn't pass up their chuck roasts. I rubbed them down with:
3 TBS PAPRIKA 2 TBS KOSHER SALT 1 TBS SEASONED SALT 2 TBS BLACK PEPPER 1 TBS CAYENNE PEPPER 1 TBS GARLIC POWDER 1 TBS ONION POWDER On the ceramic at about 250 until an internal temp of 165, then I put them in a foil pan with a beer, some beef stock and rub. Wrapped tightly with plastic wrap/foil and back on the cooker until 195. I pulled and mixed in some of the reserved juices from the foil pan. It was awesome, I think I liked it better than pulled pork. Also had a nice jalapeno and cheddar fatie while cooking. All in all a great meal.
