Very nice brisket. If you are in San Diego go to Costco Commercial they have everything you will need. Thats where i shop for competitions

Thanks, I'm originally from KC so it has been a weird feeling to get the blank stare from the grocery store butcher who has never heard of a whole brisket. The gentleman at Vons the other day started to get angry with me as I explained the flat is not considered a whole brisket. He had no idea.

Went hot and fast. Rubbed with Salt Lick rub and put into my offset running at 300 degrees with pecan wood. Smoked to color and 165 degrees in about 4 hours. Wrapped with a little beef broth for another 2 hours until internal temp was 200. Separated point and flat - wrapped flat back up, covered with towel and placed in cooler for an hour to rest. Cubed point, placed in foil pan with mixture of texas style bbq sauce and au jus. Put ends back on the pit for an hour.
