Default Sunday gravy...with a twist!

I needed to make a big pot of "Sunday Gravy" for this weekend so instead of my usual sausage and meatballs, I thought why not try a couple of racks of ribs. I threw them on the GOSM for 2.5 hrs w/hickory and apple, I didn't want to go any longer on the smoker because they will be simmering in the sauce for several hours and don't want them to fall apart. Can't wait to see how they turn out.

Sounds interesting. What's the recipe for the gravy?
