Default Unwrapped wed / Sandlers BBQ knife question

Did anyone see Unwrapped last wed? One segment was on Sandlers BBQ and it showed them trimming a bunch of briskets. But they were not using a blade knife, They were round and looked like a bone dust scrapper.

Anyone know what they were using? They looked pretty slick.
