Arrow Pulled Prime Beef Chuck Sammich

We picked up two USDA prime beef chucks at the market yesterday, so I decided to smoke them on the UDS. Here they are rubbed down and ready to go on the UDS:



After they smoked for 4.5 hours @ 300 degrees, we let them rest for about an hour, then pulled the meat into a pile of beefy goodness:



We made up some Carolina style vinegar BBQ sauce, and then I made a giant sandwich on a freshly baked baguette, and smothered the meat with the sauce:



It was REALLY good! Sorry for the lame pics...had too many other projects going to take better ones, but you get the idea.

any idea of internal temp when you pulled? how did they pull apart? looks awesome. I love me eastern carolina vinegar sauce on pork..never thought about using it on beef though. I like it!

That's a good question. I didn't go by temp, but by "feel". I knew the beef was done when it was super floppy when I picked it up with a pair of tongs, and also when I tried pulling a small portion of meat off and it just pulled away easily. As for temp, I didn't use a thermo, but I suspect it was probably in the 190-210 range. Hope that helps...

FYI, the Carolina BBQ sauce was just as good on the beef as it was on pork, perhaps even better actually!
