My second entry for the Memorial Day Weekend Throwdown share the name of two cities famous for good BBQ. I did a St. Louis trim on these spares, then smoked them Memphis style, aka dry. Dry rub only that is. The top ^ photo is the money shot for this post.








And I didn't forget the trim either, a few pieces didn't make it into this go-box. But these were delivered to a friend that was working Sunday.

This might be the last of my multiple entries for this special Weekend Throwdown.... (but there's still some time left). You can't say I'm not getting plenty of yardage out of this rule change. The plate shot has got to be my entry for this group of pictures.

It might look like salmon, but this is some steelhead I dry cured on Saturday, then smoked at 120° on Sunday in my box smoker. 75% of the wood was alder, the last pan was cherry.

Here it is after rinsing the cure and resting overnight, it's now ready to hit the smoker.




The title of this picture is "One for show, and one to go" because I'm giving the wrapped one to the guy that runs the drive-up window at the neighborhood liquor store. The last time I had to pay for a bag of ice was.... was..... Heck! I've never had to pay for ice. Heheeee.




A little fattier than trout, but that insures a nice moist product.

Very nice! There's still today left for cooking. Remember, this is an open category, so as long as it was cooked this Memorial Day weekend, was either grilled or smoked, or featured grilled or smoked ingredients, you can share it. I've seen lots of threads with pron people are sharing of food they cooked this weekend, those would be eligible here too if people posted them.

I've got a chicken slathered, rubbed and ready to cook.

Grilled a pepperoni pizza for the girls last night. First time using the new pizza stone



The chain link fence shadow adds a nice effect :)

Default Rotisserie Chicken

Rubbed with home grown rub and stuffed with apple pieces and rub,
Cooked at 275* - 300* for +/- 2 hours over a drip with beer and more rub.

Here it is ready to rest and serve.

Default Chicken legs

Hi all.
This is my first entry so I hope you all enjoy it.
My guests and I sure did.
I like to serve this food hot off the grill.
Included (but sadly not photographed) was a potato casserole and grilled corn.
Anyway enough talk, lets get to the food.

Today was our day to reflect and relax, so I fired up the gasser to save time. Baby portabellas, asparagus, vidalia onions, steaks and burgers for the family.
