Default jalapeno poppers

does anyone have a good recipe for jalapeno poppers, I wanna try some that are not deep fried but still fantastic. I will be using my smoker or charcoal grill or oven since im cooking so much food for a party. thanks guys

ABTs (Atomic Buffalo Turds) are always good. Just stuff your jalapeno with your choice, wrap a half slice of bacon (more or less) around it and smoke it!

that is exactly what you are trying to cook, basically a jalapeño popper, its just cooked on a smoker instead of frying them and has bacon wrapped around it.

good advice just wanted to add

when selecting bacon, look for the really thin ones (cheap), they get crispy easier

You can use a rack. I have a nice one and they are fun to play with.

You don't NEED one though.

Simply cut the peppers in half lengthwise, fill with your mixture (ideas below), wrap with a half a slice of bacon, smoke those bad boys for 45 minutes or so until the bacon gets crispy and enjoy...

Ideas for stuffing:

Smoked Gouda Cheese - my go to filling. Cheese melts but doesn't ooze out.
Cream Cheese with shredded Cheddar - gets a little soft but good flavor.
Cream Cheese with taco meat - good mix.
Leftover Pulled Pork or Beercan Chicken mixed with Cream Cheese and another cheese of choice. - makes for really good ABT's
Chopped Ham and Cheese - old standby.

Just about anything you like can be loaded into them. Another tip if your filling gets a little oozie... Take a 1/3 of a slice of a harder cheese like Meunster (my fav for this) or Swiss and lay it over the filling before wrapping the bacon around them. It holds the mixture in and it doesn't ooze out as bad.

This time of year when they are starting to get the nice fat jalapeno in I try and keep some just for ABT's.

I throw some on just about everytime we fire the grill or smoker up...
