First smoke pron

Was in too much of a hurry to get the ribs on in time for dinner to take any pre cook pics. Just a single rack of baby backs to test things out. Rubbed and thrown on once I got to temp.

Here is how they came out ...

Cut them up ...

Plated with a little slaw and garlic mashed (we didn't use the knives) ...

Happy daughter and ....

Happy kitty!

I have to admit I used the crutch (foiled) and gassed them after I mopped. They were a little dry at the thin end, but mostly perfect. I'm happy with them for a first try. The bark was tasty!
