Default Smoked Salmon PRON

Grabbed 3 pieces of salmon out of the freezer and decided to try 3 different rubs on them: Knox Spice Co. Chipotle BBQ, Sweet Mesquite & Knox Spice Co. Jamaican Jerk. Got the Weber Performer going indirect with Kingsford Competition Briquets & Applewood from an orchard in Pasco, WA. Drizzled some Blackberry Honey over top each piece and smoked for 3 hours at 220 degrees. Sorry about the pieces missing in the photo....couldn't control myself! Taking this to go work on the smoker tomorrow.

I think you would notice a real difference if that salmon was fresh vs frozen. Looks good though!

Oh Yeah! Have done it both ways. Have a bunch of salmon in the freezer...was hoping my wife would grow to like it as much as I do, but nevertheless she won't eat it. That's why it is in 3 - 4oz. pieces!

I think I am gonna bring Moose burger to grill tomorrow for lunch!
