Default Spatchcock Chicken on the WSM with grilled pineapple for dessert

My father in law was in town helping (and by helping I mean doing) remodel the master bathroom. Friday I thought I would cook some chickens to at least feed him good while he was slaving away. Here are some pictures. I tried three different rubs on the chicken and then mixed up a butter, coconut rum, brown sugar sauce to go over the pineapple and ice cream. here are some pics.

I tried grilling pineapple this past weekend and failed. It was bitter... apparently I over smoked it... that pineapple cant take much smoke

I thought the lawrys was pretty good. I got it for Christmas and that was the first time I had used it. Will be trying it on the grill this week. I really liked the pineapple but I do wish I had left it on the grill a little while longer. The coconut rum sauce was awesome on the ice cream and as a marinade for the fruit. I think I will try some peaches when they are in season but with some cinnamon and just straight rum.
