Just recently (being a new to all this), seen a picture if someone`s open smoker door and relized his water pan was lower than where I keep mine at. I noticed I was using my water pan brackets upside down, which keeps the pan higher (also makes a smaller diameter which the pan does`nt fit as nice). With this in mind I constructed my baffle longer into the chamber than others. Mine protrudes a good 7 inches under my pan. I believe this let`s more heat and smoke get under the pan and to the center and far wall of the smoker chamber. With this in mind I continue to have very good readings from my NB door temp gauge. Pretty much dead on (as it was during a boiling water test). My last Q I even raised my heat shield another notch and had the same good results (Same temps as my hanging dig probe). I do make sure the heat shield is up agaist the door, not to let any heat go up that way.
Now I use the pater pan brackets in the correct way, but on the second level to allow this additional space. I`m having good success reaching and maintaing temps. For what it`s worth. ............... Xczar |
