Default 1st Pastrami Attempt a Success- With Pron!

I've subscribed to over a dozen threads containing great recipes with the intent of someday trying those recipes. Call it lack of motivation or whatever, I've only tried a few of them. Well it's time to turn over a new leaf.

I subscribed to a pastrami thread started by JD McGee back in November. JD used a recipe found on the Virtual Weber Bullet and it seemed simple enough that I finally gave it a shot. Boy am I glad I did. The pastrami turned out amazing! This is one that I'll be repeating many times in the future. The link to the recipe can be found at:

I took a few pics of the process. I finished this off with a pastrami reuben sandwich that was oustanding.

Started with a full packer brisket, about 12.5 lbs.

Trimmed off point and ended up with a 6.5 lb flat. Not a very thick flat, but consistent thickness across.

Here's the flat rubbed down with the dry cure ready for a 3 day rest in the fridge.

After 5 hours in the FEC it's ready for a 2 hour rest in cooler, then overnight in fridge.

Here's the finished product! Having a slicer really helped out by allowing the slices to remain thin and therefore tender.

After steaming a few slices I made myself a pastrami reuben (pumpernickel, kruat, swiss and homemade russian dressing). This sandwich tasted great.
