Default What the heck is...

... a 'bacon chop'?

Has anyone heard of one of these? I think they might be English.

Thanks!

Eric

Do not know what a bacon chop is. But, English Bacon that I was told about is a slice of loin with the upper half of the belly still attached. So it looks like Canadian and American bacon joined at the hip.

It was casually mentioned in this thread
http://www.bbq-brethren.com/forum/sh...ad.php?t=78704

and through peer pressure, Master and I (Gore) tried to create it based on Master's research

Essentially it is a butterflied pork chop, with the cooked rib re-inserted and also filled with sausage. It was wrapped in bacon. I do not know if there is another definition. All the details are given in "Cooking with the Master" in this link:

http://www.bbq-brethren.com/forum/sh...5&postcount=77

Having read that again, I'm wondering if Hormel also might have an eye on Chris.

Actually it's not a pork chop wrapped in bacon.

This from the bacon chop secret society:
http://www.mrbaconpants.com/the-baco...ecret-society/

Quote:
It’s that time year again were I make fun of the Irish for their tradition of boiling back bacon (gross). But instead of doing that for the second year in a row, I want to talk about the bacon chop.
The bacon chop is supposedly an Irish cut of pork that contains the pork belly and Spare rib attached. Finding out if that is true or not is proving to be difficult. Last year I wrote about my trouble finding information about it. Only a few people could help me, one of them was Brent who gave the following explanation.
